Pulping
Only ripe cherries are selected. The fruit is carefully removed to protect the integrity of the bean.
Fermentation & Washing
The beans are fermented under controlled conditions to develop clarity and depth of flavor. They are then washed to remove any impurities — leaving only clean, expressive notes.
Drying
Sun-dried slowly on raised beds, the beans develop balance and character without shortcuts.
Milling & Selection
Before export, the coffee is milled and meticulously sorted to ensure consistency, quality, and purity.
Our family personally oversees the relationships with the farmers, the selection of lots, and the preparation for export. From the mountains of Colombia to distribution in the United States, we remain accountable for every stage.
